CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Pie Crust

This recipe makes exactly two 9" pie crust, or enough for one pot pie or one fruit pie that you need a top for. A lot of people are so afraid to make pie crust because they fear they might make it wrong, or are just scared to give it a go. Making pie crust does not need to be feared; it is simple, easy, and you do not even need a machine to do it (just use a good old fork and your hands).




You Will Need: 

3 Cups Organic 100% Whole Wheat Flour
2 1/2 Sticks Organic Butter, unsalted & cold, cubed
1 tsp Unrefined Salt
4-8 tbsp Water, ice cold



Dice your cold butter, and place in freeze until you need it


Mix salt and flour


Add in your butter


Work the dough until it is fine crumbs, I just used a fork and my hands, but you can just use your food processor or pastry folder 


Now add in 1 tbsp water at a time, I only use 7 tbsp


Here is the dough, yay! super easy right? Exactly! 


Wrap in plastic wrap until you need it, you can freeze this dough like this, or roll it out and freeze it into the pie pan, once frozen remove and bag
